‘Twas the night before Christmas, and throughout the house, only the scent of Christmas filled the air. On the table beside the tree lay a treat made just for the one and only Santa Claus. This recipe is sure to secure your spot on the nice list for years to come.

Music recommendations are your favorite holiday music. Some Mariah, Michael, Nat or even just some instrumentals.

That treat is none other than cookies, but these aren’t your ordinary cookies. Ladies pay attention as well this will help you combine two things to keep that man happy. We are making Brown Butter Banana Chocolate Chip Cookies. You read that right and if done correctly you will have to a light cookie that has a crunch with a flavor of bananas and chocolate. Combining a classic chocolate chip cookie with the favored banana bread just made sense.

What you need:

2-3 ripe bananas
1.5 cups all-purpose flour
1 tsp baking soda (optional)
.75 cup sugar
.75 cup brown sugar
1 stick unsalted butter
1 egg
1 tsp vanilla
1-1.5 cups of chocolate chips

Time to Mix:

Step 1:
Melt the butter in a small saucepan. Turn it on medium heat and allow the butter to melt. Once fully melted allow it to cook longer to turn a golden color. This will bring out the nutty toffee flavor out that will add more depth to your cookies.

In a mixing bowl add in your bananas then mash them with a fork. Once mashed add in sugar, brown sugar, vanilla and brown butter. Mix well either with a whisk, hand mixer or stand mixer. You will want the ingredients combined well. After the mixture has cooled down some add in your egg.
Note – It is important to do this after the mixture has cooled because if you don’t it will cook the egg.

Step 2:
Next you want to add in flour, baking soda and salt to your wet ingredients. Slowly combining them overtime to not over mix the ingredients. Turn your mixers on a low or medium speed or just use a wooden spoon to combine.
Note – Adding baking soda will make a light cookie that is chewy. It causes a rising action while baking.

Once you those ingredients mixed you can add in your chocolate chips giving the mixture a mix to just incorporate the chocolate chips into the batter. Then place your batter into the fridge for about 30 minutes. This will allow the batter to settle and firm up.

Time to BAKE!

Turn your oven on to 350 to preheat.

While the oven is preheating. Spray a cookie sheet with cooking spray or use a stick of butter to grease the tray. Then you will want to scoop the batter into balls and place them evenly on the cookie tray. The size of the cookie is up to you.
-Personally, I like to form the dough into a log shape wrap it in plastic wrap and place it into the freezer for a little bit. Then cut it into little ovals and place evenly on sheet tray
Another favorite is making monster cookies by taking to big spoons and scooping out big pieces and placing them on the sheet tray.

-Once the oven is pre-heated and your trays are full of cookie dough you will want to bake them for 10-12 minutes. The time depends on your oven some run hotter, some run colder just depends. You can even cook longer if you like a crunchier cookie.

At 10 minutes check to cookies. You can look at them and see they are turning golden brown and if you touch them, they should dip a little but then return to their original place.

Remove them from the oven and carefully take them from the baking sheet and place them on a cooling rack or plate. This step allows the cookie to firm up while not continuing to cook on the hot sheet tray. Also allows you to refill your cookie sheet to continue baking.

You can eat one right away for a soft gooey cookie or wait a little but for a warm chewy gooey cookie. This is purely up to you and how you are feeling. I recommend a cold glass of milk/milk substitute to go along with your dessert.

And there you have it – the perfect batch of cookies, warm from the oven and ready to be devoured!
